It's the kind you put in the freezer to get cold, then you churn the ice cream by hand while it freezes in the cold pot. Fun for little kids.

<b>Ingredients:</b>
<ul>
<li>300mL cream (suitable for whipping - not low fat cream)</li>
<li>1/3 cup milk</li>
<li>1/4 cup sugar</li>
<li>1/2 tsp vanilla essence</li>
<li>1 egg white</li>
<li>1 pinch salt</li>
</ul>
<b>Method:</b>

Beat the cream til it just starts to thicken.

Add the milk, sugar and vanilla essence and beat til thickened.

Wash the beaters (very important!) then beat the egg white in a separate bowl until it is stiff. Add the pinch of salt and beat a little more til it's shiny.  If there is any cream on the beaters or the bowl in which you are beating the egg white, it will not stiffen (learn from my mistake).

Add the egg white to the cream mixture and beat it in.

Now you're ready to turn it into ice cream. If you have an old 80's ice cream churn, put the ice cream in the freezer for a little while (maybe an hour) so it freezes faster in the churn.

If you don't have an ice cream churn, just whack it in the freezer in a container about twice the size of the mixture quantity for a couple of hours til it's sorbet consistency. Then pull it out and use a fork to whip it up a little. If you're keen, you could beat it with the electric beaters to get more air into it. Repeat process a couple more times til it's fully frozen.

Dinner tonight will be lazy mushroom risotto, probably with steamed zucchini and carrots. I got the recipe from someone on dopeyourkids.com ages ago.

<b>Ingredients:</b>
<ul>
<li>1 cup arborio (short grain) rice. It has to be short grain rice or it won't stick together like risotto should.</li>
<li>1 onion, finely chopped</li>
<li>2 1/2 cups vegie stock (I use Massel chicken flavour)</li>
<li>1 cup mushrooms, finely sliced</li>
<li>30g butter, diced</li>
<li>2 tbsp grated parmesan</li>
<li>salt &amp; pepper to taste</li>
<li>feta for seving, if preferred</li>
</ul>
<b>Method:</b>

Preheat oven to 180C.

Put the  mushrooms, stock, rice and onion in a large casserole dish and give it a stir. Place the cubed butter on the top.

Bake covered 30-40 minutes until rice is cooked. Stir in parmesan and salt &amp; pepper.

How cool is this! My Dad made a bird house for Ashley's Christmas present, using old fence palings from the guest houses he's been renovating with my mum. Mama and Grandad (Emma's mum &amp; dad) gave the girls a cubby for Christmas (my mum is great at garage sale shopping).

Ash has to set it up in our back yard tomorrow. Sophia had so much fun staying at <a href="http://www.centralalburydreamcottage.com.au" target="_blank">my mum's guest house</a> over Christmas, she really didn't want to come home! And no wonder... what you can't see in the photos is there's another plastic toddler playgym with slide, a boat-shaped sandpit with shade cover, the Hills swings and see-saw, and a spa under the gazebo in the garden. I'm a bit of a slack mummy. At 10pm the night before present opening, I was still finishing off making Billy's present. So what do you give a four month old who already has everything he needs handed down from his big sisters? He got a couple of decorated canvases - one with a photo of his big sisters (who give him hours of amusement every day) and the other with a photo of mummy &amp; daddy. He seems to like them. Just waiting til he's awake tomorrow so I can hang them on his bedroom wall.

William opened his first ever Christmas present this morning. Well technically Sophia opened it... but William smiled and watched, and played with it after it was open. Well OK, he just put it in his mouth... but it's all pretty exciting for a four month old.

I didn't know what I wanted to swap for, so I said "surprise me" and she made me a gorgeous bag in just the right colours for me. Pretty good given that she's never met me!

Inside the bag there's a mobile phone pocket - yes, that is a new phone sticking out of it... I got a Palm Treo on eBay last week and love not having to lug the phone and PDA separately anymore. And it syncs really nicely with the iMac. Bill Gates can kiss my rosy red... oh sorry, getting a bit off topic...  The little zip pouch will be useful for so many things that shouldn't be left rolling around the bottom of the handbag. She also popped a lovely handmade soap and some cute pegs into it - Jools smelled the soap and said "oooooh special soap" in the most adorable voice.

Imagine 50-150 kids under school age in a yard. With Santa, face painting, singing, and several tables of cakes &amp; biscuits etc. (There was fruit, but Sophia spent the whole day talking about chocolate cupcakes and wasn't going to pass up the opportunity...) I was VERY tired by the time we got the girls into bed, but they had a great time at the party.

The girls are at an age where they're starting to understand about leaving the decorations on the tree - I've only had to say "DON'T take it off the tree!" about a thousand times this Christmas (it was a gazillion last year, despite the tree being up on a table). However, we have a Fisher Price nativity set which they can play with to their heart's content. Although I'm not sure where Baby Jesus has gone, he'll turn up on New Year's Day I expect.
