Dinner tonight will be lazy mushroom risotto, probably with steamed zucchini and carrots. I got the recipe from someone on dopeyourkids.com ages ago.

Ingredients:
- 1 cup arborio (short grain) rice. It has to be short grain rice or it won't stick together like risotto should.
- 1 onion, finely chopped
- 2 1/2 cups vegie stock (I use Massel chicken flavour)
- 1 cup mushrooms, finely sliced
- 30g butter, diced
- 2 tbsp grated parmesan
- salt & pepper to taste
- feta for seving, if preferred
Method:
Preheat oven to 180C.
Put the mushrooms, stock, rice and onion in a large casserole dish and give it a stir. Place the cubed butter on the top.
Bake covered 30-40 minutes until rice is cooked. Stir in parmesan and salt & pepper.
Crumble some feta on top just before serving, if you prefer.
