Lightly butter top and sides of pan. In a microwave bowl, heat butter plus bittersweet and unsweetened chocolates on high in one minute intervals, stopping to see if chocolate is melted, and taking care not to burn chocolate. When melted, mix well and let stand at room temperature for 20 minutes. In large bowl, using a hand held mixer set at medium high speed, beat eggs and sugars for 2 to 3 minutes until light in color. Beat in chocolate mixture, vanilla and champagne flavor until blended. Beat in flour and salt. Using a wooden spoon, stir in nuts if desired. Scrape batter into prepared pan and spread evenly. Bake for 25-30 minutes until a toothpick inserted in center comes out clean. Remove pan from oven to cool. Lift the brownies out of pan and place on cutting board. Using heart shaped cutter, cut out as many brownies as you can, saving crumbs and scraps for another use. Place a generous amount of white chocolate you chopped on top of each brownie. Place some fresh raspberries on top of each brownie. Next, melt semi-sweet chocolate in the microwave a minute at a time, making sure not to burn the chocolate, then mix until smooth. Drizzle a generous amount of melted semi-sweet chocolate on top of brownies. Add enough chocolate to hold everything in place. Let chocolate harden and serve.
Notes: Serve this decadent brownie with a glass of champagne and how much more romantic does it get? This is what I am serving my sweetie this year for Valentine's Day.

Note
A 'pantry sauce' is one that can be made with ingredients, such as ketchup, mustard and soy sauce, that can be found in the home pantry.
Beer
Nothing's better with a platter of spicy wings--Buffalo or not--than beer. Reach for a malty, flavorful ale like Old Speckled Hen.
